BBQ Grilled Sardines with Chermoula Sauce

Ingredients (serves 4)

Sardines:



Chermoula Sauce:


  • 1 large bunch coriander
  • 1 small bunch parsley
  • 2 garlic cloves
  • Skin of 1 preserved lemon
  • 1 tsp ground cumin
  • ½ tsp smoked paprika
  • ¼ tsp chili flakes
  • 75ml extra virgin olive oil

Additional Equipment:


  • 8 metal skewers

Method

  1. Prepare the Chermoula Sauce:

    • Combine all the chermoula sauce ingredients in a food processor and blend until smooth. Season generously. This sauce can be stored in an airtight container in the fridge for up to three days.
  2. Prepare the Sardines:

    • Preheat the barbecue for direct cooking. Rub the sardines with olive oil and season well. Thread each sardine onto a skewer, running from head to tail. If desired, make a few slashes on each fish with a knife.
  3. Cook the Sardines:

    • Grill the sardines over hot coals for 2-3 minutes per side until fully cooked and nicely charred. Serve drizzled with the prepared chermoula sauce.
