BBQ Grilled Sardines with Chermoula Sauce

Ingredients (serves 4)
Sardines:
- 8 whole sardines, gutted
- 2 tbsp olive oil
Chermoula Sauce:
- 1 large bunch coriander
- 1 small bunch parsley
- 2 garlic cloves
- Skin of 1 preserved lemon
- 1 tsp ground cumin
- ½ tsp smoked paprika
- ¼ tsp chili flakes
- 75ml extra virgin olive oil
Additional Equipment:
- 8 metal skewers
Method
Prepare the Chermoula Sauce:
- Combine all the chermoula sauce ingredients in a food processor and blend until smooth. Season generously. This sauce can be stored in an airtight container in the fridge for up to three days.
Prepare the Sardines:
- Preheat the barbecue for direct cooking. Rub the sardines with olive oil and season well. Thread each sardine onto a skewer, running from head to tail. If desired, make a few slashes on each fish with a knife.
Cook the Sardines:
- Grill the sardines over hot coals for 2-3 minutes per side until fully cooked and nicely charred. Serve drizzled with the prepared chermoula sauce.
