BBQ Sea Bass Recipe

Ingredients
- 1 sea bass, filleted
- 1 clove of garlic, grated
- 1 shallot, thinly sliced
- 10g of root ginger
- 20g of salted Welsh butter
- 1 red chilli, sliced
- A small bunch of parsley, chopped
- Salt and pepper to taste
Method
- Start by preparing the foil; fold the edges upwards to create a containment so the butter won’t leak out during grilling.
- Prepare the vegetables and spices. Once the foil is on the BBQ, melt the butter with the garlic and ginger.
- Once the butter has melted, place the sea bass on the foil, skin side down. Scatter the chilli, shallots, salt, and pepper over the fish.
- Grill for 10 minutes, basting the fish frequently with the melted butter. If your BBQ has a lid, close it to enhance cooking. If not, cover the fish with additional foil. Continue cooking until the skin is crispy and the flesh turns white and flaky.
