Lobster Macaroni with Hafod Cheddar Cheese

Ingredients (serves 4)

• 2 live Welsh lobsters

• 200g macaroni

• 400ml milk

• 200g Hafod cheddar

• 15g flour

• 15g butter

• 2 egg yolks

• Curly parsley


1. Cook the pasta according to the instructions, until al dente

2. Melt the butter in a separate pot and add the flour to make a roux, 

gradually add the milk whisking until combined, season to taste

3. Grate the cheese and add to the sauce, stirring to melt through

4. Cook the lobsters

5. Once the lobster is cooked, separate the tail and reserve, crack 

the claws and pick the meat from the legs and knuckles

6. Once the pasta is cooked, add it to the sauce along with the claw, 

leg and knuckle meat from the lobster, the egg yolks and chopped 

parsley, and stir to combine

7. Serve the lobster tail on a bed of mac & cheese
