Mother’s Day Breakfast: Smoked Salmon & Avocado on Toast
A perfect Mother’s Day breakfast or brunch—light, fresh, and full of flavour!

Ingredients (serves 2)
- 200g smoked salmon 🐟
- 1 ripe avocado, mashed 🥑
- 2 tbsp cream cheese
- 1 tsp lemon juice 🍋
- Pinch of sea salt & black pepper
- 1 tbsp capers (optional)
- 1 spring onion, finely sliced
- Dash of green Tabasco (optional)
- 2 slices of toasted sourdough or country-style bread
Method
- Prepare the avocado – Mash with a little sea salt, black pepper, and lemon juice.
- Season the cream cheese – Mix with a pinch of salt, black pepper, and a squeeze of lemon. If you like a little heat, add a few drops of green Tabasco.
- Toast the bread – Choose a good-quality sourdough or country loaf for the best flavour.
- Layer it up – Spread the cream cheese over the toast, then add a generous layer of mashed avocado.
- Top with smoked salmon – Gently place the smoked salmon over the avocado.
- Garnish – Scatter with capers and sliced spring onions for extra flavour.
- Optional extra – Add crispy smoked bacon rashers for a savoury twist!
Serve with fresh fruit juice, a cup of tea, or a celebratory glass of prosecco!
